One thing I'm surprised is not mentioned... when I lower my turkey into the oil, I turn the flame OFF on my burner.
Get the bird situated and relight the flame.

i like baby backs in the dutch oven... in my 12inch deep i do three racks.
remove membrane, season as normal and then cut into 2-3 rib pieces. spread evenly on the bottom and then layer ribs into dutch oven.
ill hit them around 300 - 350 for about 2 hours, then let them cook another hour or hour and a half around 250. add your bbq sauce the last half hour or so.
youll know they are done when about 1/4 to 1/2 inch of bone is sticking out. or you can try the bone twist test... if it will twist, they are done... if not, let them go a while longer.
spread coals evenly on the bottom and concentrate most of your coals on top. i wouldnt want to try this recipe w/ campfire coals, would make it pretty labor intensive.

if the food is sticking, it may just be that you need to give it more time before you flip.
when im grilling, the meat will usually free itself once it's sealed.

along the lines of the cast iron skillet, we use the lid to our dutch oven for biscuits... just flip the lid upside down and it's perfect.
